What once began as a self-imposed year-long challenge to make one cobbler a week has turned into something I find truly enjoyable. Making cobbler.
Here is my magic recipe:
~ The Crust ~
3/4 cup flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp salt
2 tbsp butter, cubed
1 tsp vanilla
~ The Filling ~
Any combination of fruit will do, but I recommend:
5 apples, peeled and largely diced (pink lady apples are my go favorite because of their tang)
1 cup of mixed berries (blueberry, strawberry, blackberry, or raspberry)
2 tbsp flour (or corn starch)
2 tbsp lemon juice
1-2 tsp cinnamon
Peel & Quarter fruit
Add flour & lemon juice, and stir.
Sprinkle cinnamon evenly and generously on top of fruit (no need to mix in!).
Mix dry ingredients for the crust. Add egg and cubed butter. Mix with a fork in a quick whisking motion so the texture becomes crumbly, but not doughy. Add vanilla last and continue to whisk the crumbles.
Sprinkle dough on top so fruit is covered evenly.
Bake at 350 F for 35 minutes, or until golden brown on top.
Let cool for 15 minutes, and serve with your favorite ice cream.
You will not be disappointed.
I like my cobbler tart and zesty. Other great filling combinations include varieties of plum, peaches, nectarines, or other summer time fruit.
